From “Better Homes and Gardens Quick & Easy Recipes” (1957)

4 pork chops, cut 3/4 inch thick

1 small onion, chopped

3 tablespoons margarine or butter

1 8-ounce package (2 cups) herb-seasoned stuffing mix

1/2 cup water

1/4 teaspoon dried oregano, crushed

1 8-ounce jar pizza sauce

1 3-ounce can sliced mushrooms, drained

1 4-ounce package shredded mozzarella cheese

Trim excess fat from the chops and set them aside. In a medium saucepan, cook the onion in margarine or butter till tender but not brown. Add the stuffing mix, water, and oregano to the cooked onion; stir until well combined.

In a 12 x 7 1/2 x 2-inch baking dish, divide the stuffing mixture into 4 mounds (put about 1/2 cup of stuffing mix in each mound and shape with your hands). Place a pork chop atop each mound. Pour the pizza sauce over the pork chops. Sprinkle the drained mushrooms atop the sauce. Cover with foil and bake in a 350-degree oven for about 1 hour or until the chops are tender. Sprinkle the chops with shredded cheese. Makes 4 servings.
